That was the behavior before the last update. If you turned it off, it stayed off. Now if you turn it off, you get to do it again and again and again. If you're lucky like me, you get to turn it off multiple times in the same day.
Just an annoyance obviously. But one that doesn't have to exist. Poor QA on the last update by the software team. And, actually, poor camera placement choice by the design team when they chose the location. If the camera was set somewhere better, I wouldn't mind having all the monitoring set to "on" all the time. But with my steering wheel position, it blocks the poorly placed camera and annoys me more with the warnings on the main display to tell me that the camera can't see my face every time it turns itself back on.
