First off, I am a network and security geek - certifiably for all things.
Something that has always been brought by almost everyone is how the vehicle maintains its connected state. First simple question:
1. I assume all network connectivity outside the car is either cell (4G or 5G) and wireless (2.4Ghz or 5 Ghz) only. There is no satellite connection of any sort.

Second tougher question:
1a. What cell service does Lucid use/partner with? Do they ride on whatever is available?

This is a concern when the cell towers go away and you have no service. What if you live in area with bad cell coverage? What are the last resorts? What operations are disabled in that disconnected or 'DDIL' state? Obviously, telemetry will be limited or queued when disconnected. Just random thoughts...

I live in an area with terrible AT&T reception and the car struggles mightily to wake up from the app.

4G LTE or WiFi. AT&T is the provider for Air.

Mobile key and fob are Bluetooth, so no worries there. Maps can work offline, assuming you’ve pre-downloaded them. You won’t get traffic, but that’s fine.

If offline, you have to pull over and manually switch maps to "offline mode". The car won't do this for you, nor will it seamlessly use its downloaded maps as would Google or Apple maps.

You do not have to pull over. You can switch it in the settings without pulling over just fine. It might be a good idea to learn where that is ahead of time, but I've done this before without issue.

Right. I did it without pulling over, but I can't say it was a safe or smart move. It took me several seconds of looking away to find the setting. Next time, I'll pull over.

Ah, I see. Yeah. I happen to know exactly where it is, so it’s pretty easy for me to tap.

But if you don’t know where it is, yeah, pull over. :)
