I took delivery of a '23 air GT with 19" tires this week, I charged the car to 100% and the read out only said 505 miles rather than 516 as a new car should. I am wondering if the car sitting in storage for X amount of days could cause this slight degradation.

A battery is degraded by both time and usage.

If it is aged without any usage, it still degrades.

Your battery gauge that displays 505 might not be accurate.

It might need to be recalibrated to show a higher number after that.
 
If they entered the new EPA data, it's not 516 anymore.

I just got my car back, new battery installed and everything. I am charging it to 100% this morning, for the first time. I’m not anticipating 516 miles anymore.

500/0.95 = 526

Congrats for having longest range production EV in North America!!! 😊
I wish. It didn’t get quite that high at 100%. It topped out at 515 miles, two miles less than my first battery.
