I'm wondering if we can use the cable to use our Airs as giant power banks to power AC for camping etc. Does anyone know the power output specs, like voltage and current?

You can't currently. RangeXChange will output 240V at up to 40A to another vehicle through the mobile charging cable. With some electrical engineering, you could trick the mobile charging cable into thinking it was plugged into a vehicle and get it to deliver 240V, but it is single-phase (not split phase), so no possibility of getting 120V out.

Thanks for the detailed response. Hopefully, someday we can unlock more use cases for the RangeXchange cable.

You theoretically might be able to plug the car into an EcoFlow battery that accepts the J1772 via their X-stream adapter. That battery then has a bunch of power outlets on it. EcoFlow support said it should work, but nobody has tried it yet... EcoFlow Delta Pro battery is also like $1500+...
