Personal experience is subjective, the performance data is real. I bet the Dragy numbers will be very close to Hagerty's numbers.

The GT has a smaller front motor. The DE has the GT rear motor in both the front and rear. There are no other known differences. If they gave the Gravity more torque it would probably need stronger axles. 100% power would be infinite torque at launch. :p

Maybe the problem isn't the wireless technology but the software? I'm biased as an RFIC designer but I bet there are no problems with the supplier (who probably sell to many other manufacturers that have working keys). The root cause is probably incompetent software engineers. :p

The Plaids and Rivian both have half shaft issues so that's one downside to more torque. Shorter gearing would also reduce efficiency. It would also be plenty quick for me, I probably only use full power once a day on my Model 3 and the Gravity is significantly quicker.
