Has anyone in California installed a license plate wrap to the front of their Gravity? The vertical height available in the car seems a little shorter than an actual license plate. I'm thinking I may have to trim the top and bottom border of the wrap slightly, but haven't ordered one yet.

I haven’t put one on the Gravity, I did have one on my Tesla. I don’t believe you are allowed to alter them, they are supposed to be a replacement for the physical plate. So same size. They are a pain to remove, I can tell you that much.
 
Yes, I installed the license plate wrap on my Gravity front bumper and indeed it's just a bit taller than the space allows.
I tried to fold it on the bottom edge, but it doesn't stick very well, so I would recommend trying to trim it to fit.
You could also try raising the plate a bit to compensate and see if it folds well along the top.
